Coconut Macaroons, Keto

Ingredients:

  • 1/2 cup softened butter, one stick
  • 4 oz. softened cream cheese
  • 2/3 cup monkfruit
  • 2 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 4 cups shredded coconut, unsweetened

Directions:

  1. Beat all ingredients together adding coconut last.
  2. Spoon out on baking sheet and flatten.
  3. Freeze.
