Ingredients:
- 4 slices bacon
- 2 Tbl butter
- 1/2 med onion, diced
- 1/4 cup jalapeƱos
- 2 cups chicken brothe
- 2 cups chicken, cooked and diced
- 4 oz cream cheese
- 1/3 cup heavy cream
- 1 cup shredded sharp cheddar
- 1/4 tsp garlic
- 1 tsp salt and pepper
- 1/2 tsp xanthan gum
Directions:
- Fry bacon, crumble and reserve.
- Saute onion to translucency.
- Add pepper, chicken broth and chicken.
- Bring to a boil, reduce to simmer for 20 min.
- Heat cream cheese to soft and warm. Wisk into soup and add cream.
- Add thickener if desired.
- Top with cheese and bacon.
- Enjoy!
Ingredients:
- 1 lb bison or ground beef
- 1 pkg taco seasoning
- or make your own:
- 1 Tbl minced garlic
- 2 Tbl chili powder
- 2 tsp cumin powder
- 1 can rotel
- 16 oz. beef broth (chicken broth works as well)
- 4 oz cream cheese
- 1/4 c heavy whipping cream
- salt and pepper
Directions:
- Cook bison (or beef) and drain.
- Add meat all other ingredients in a stock pot and bring to a boil.
- Simmer for about 20-30 minutes.
