Ingredients:
- 1/2 cup softened butter, one stick
- 4 oz. softened cream cheese
- 2/3 cup monkfruit
- 2 tsp cinnamon
- 1 tsp vanilla
- 1/2 tsp baking soda
- 4 cups shredded coconut, unsweetened
Directions:
- Beat all ingredients together adding coconut last.
- Spoon out on baking sheet and flatten.
- Freeze.
