Ingredients:
- 4 slices bacon
- 2 Tbl butter
- 1/2 med onion, diced
- 1/4 cup jalapeños
- 2 cups chicken brothe
- 2 cups chicken, cooked and diced
- 4 oz cream cheese
- 1/3 cup heavy cream
- 1 cup shredded sharp cheddar
- 1/4 tsp garlic
- 1 tsp salt and pepper
- 1/2 tsp xanthan gum
Directions:
- Fry bacon, crumble and reserve.
- Saute onion to translucency.
- Add pepper, chicken broth and chicken.
- Bring to a boil, reduce to simmer for 20 min.
- Heat cream cheese to soft and warm. Wisk into soup and add cream.
- Add thickener if desired.
- Top with cheese and bacon.
